processors for 3D fluid dynamics model

I am attempting to model a 3D incompressible flow (spheres moving past a row of cylinders), and I am considering buying a workstation. Will there be much difference (in terms of simulation running time) between having the processor being a Dual quad core (intel xeon E5606) processor and having the processor being simply a quad core (also intel xeon E5606) processor? In other words, is having a dual quad core processor likely to make the simulation visibly quicker? In addition, will having a six core processor speed things up significantly from having a quad core processor (for 3D fluid dynamic models) ? I would really appreciate any input anyone might have.
