Turning a function off mid-simulation

I'm trying to do a heat transfer simulation wherein a small seed is heated up inside a tissue to a certain point, and then let to cool down via heat dispersion. I want to create an animation wherein the seed heats up for 40 seconds, and then is let to cool for another 40.
Right now I have it so that the temperature on the boundaries of the seed varies with time via a -cos(x) function, this is fine for the heating phase, but I want it to cool without a driving function via natural heat dispersion. Making two separate animations and splicing them together doesn't work because I need to retain the data of the heat transfer during the heating phase.
I've tried using a piecewise function but I'm not sure how I would define the cooling phase. I figured there has to be a way to turn a function off mid-simulation. Thanks!
